YAY, bank holiday weekend is upon us. Time for a lie in and a lazy lazy breakfast, you deserve it!! This weeks Mod Fam Food is all about Brunch recipes which are super simple to make and taste delicious too.

Bircher Muesli

Bircher muesli makes a perfect spring start to the day. It’s a summer alternative to porridge, with slow release energy and packed full of goodness.

You will need…

200g rolled oats

2 green apples, grated

150g dried berry, and seed mix

400ml apple juice

300g Greek style yogurt

3 heaped tbsp chopped pistachios

3 heaped tbsp pomegranate seeds

Serves 6

Here’s what to do…

  1. Mix the oats, grated apple and berry/seed mix in a bowl. Pour over the juice, mix, cover and chill overnight.
  2. Stir in the Greek yogurt, and divide between 6 glasses.
  3. Top with sprinkled pomegranate seeds and chopped pistachios.

Tips…

The oat mixture will keep up to 3 days covered in the fridge. Just add the yogurt just before serving.

Mix up the ingredients…add apple and mango juice for a change, dried coconut, flaked almonds, chopped almonds, or a little cinnamon to the oat mixture.

Breakfast Pancakes

I’ve been making pancakes most mornings for the past week, experimenting with quantities and flavours. These are the fluffiest pancakes ever!

What can be better than quick breakfast pancakes to have with crispy bacon, honey, and nuts or maple syrup, smoked salmon, scrambled eggs, Greek yogurt and berries….the list is endless?!!

You will need…

140g self-raising flour, sieved

200ml semi-skimmed milk

1 large egg

Pinch salt

1 tsp caster sugar

28g butter for frying

Serves 4-5

Here’s what to do…

  1. Whisk the flour, milk, egg, salt and sugar together in a bowl until thick and smooth.

2.   Heat a little of the butter in a large frying pan until melted, and add spoonfuls of the batter cooking for a few minutes each side until just golden.

  1. Serve immediately with berries, fruit, Greek yogurt, and honey.

Tips…

Add a tsp cinnamon to the batter, and serve with honey and chopped walnuts.

Add 2 tsp chopped chives to the butter and season with pepper. Serve with smoked salmon, scrambled eggs and drizzle with lemon juice.
