Here’s what to do…

  1. Place the salmon fillets on a baking tray/dish.
  2. Mix the bread crumbs, pesto, pistachio nuts and a touch of lemon zest together in a bowl and season.
  3. Divide the mixture between the 4 fillets and spread over the top of each piece of salmon.
  4. Drizzle with a little of olive oil and bake in the oven at 180 for about 20 minutes.
  5. To serve, remove skin from each fillet and drizzle with the juice of half a lemon.

Tips…

Substitute the green pesto with red, or try an olive paste as an alternative.

You can substitute the pistachios for nuts of your choice, or sprinkle with a seed mixture too.

The salmon is wonderful hot, or cold if you need to prepare ahead of time.

It’s as easy as that! Why not give it a whirl as a Valentines supper…? Take a peek here at some fab Valentines puds we did earlier in the month. Have a great weekend!
