YAY, bank holiday weekend is upon us. Time for a lie in and a lazy lazy breakfast, you deserve it!! This weeks Mod Fam Food is all about Brunch recipes which are super simple to make and taste delicious too.
Bircher Muesli
Bircher muesli makes a perfect spring start to the day. It’s a summer alternative to porridge, with slow release energy and packed full of goodness.
You will need…
200g rolled oats
2 green apples, grated
150g dried berry, and seed mix
400ml apple juice
300g Greek style yogurt
3 heaped tbsp chopped pistachios
3 heaped tbsp pomegranate seeds
Here’s what to do…
- Mix the oats, grated apple and berry/seed mix in a bowl. Pour over the juice, mix, cover and chill overnight.
- Stir in the Greek yogurt, and divide between 6 glasses.
- Top with sprinkled pomegranate seeds and chopped pistachios.
Tips…
The oat mixture will keep up to 3 days covered in the fridge. Just add the yogurt just before serving.
Mix up the ingredients…add apple and mango juice for a change, dried coconut, flaked almonds, chopped almonds, or a little cinnamon to the oat mixture.
We served the muesli up in LSA International haze glass tumblers.
