Christmas Canapes
I don’t know about you, but this time of year I love to have a few recipes up my sleeve which I can throw together last minute for any unexpected guests or gatherings. So this week I’ve put together a couple of recipes for super simple Christmas canapes which are guaranteed to impress your guests and leave them wanting more.
Serrano wrapped pear with stilton Christmas canapes
You will need…
6 slices Serrano ham
1 pear
100g stilton
Handful rocket
Makes 12
Here’s what to do…
1.Tear each slice of ham in half lengthways
2.Core the pear and cut into 12
3.Place a piece of pear at the bottom of the ham slice, add a small piece of stilton and rocket before rolling up and securing with a cocktail stick.
4.Season and serve
Tips…
Try using goat’s cheese as an alternative to stilton.
Add a little cranberry sauce or Christmas chutney for an extra dimension.
Mini lamb and feta burgers with minty yogurt Christmas canapes
You will need…
500g lamb mince
2 tsp ground coriander
2 tsp cumin seeds
1 red chilli deseeded and chopped
2 tsp mint sauce
Handful flat leaf parsley, chopped
2 tbsp Worcestershire sauce
1 egg lightly beaten
100g feta cheese, cut into 16 cubes
1 tbsp olive oil
Dip…
200ml natural yogurt
handful mint, finely chopped
Makes 16
Here’s what to do…
- Mix the yogurt and mint together for the dip and season well. Chill until ready to serve
- Combine the mince, spices, chilli, mint sauce, herbs, Worcestershire sauce and egg together in a bowl. Divide into 16 and shape into small burgers, pushing a small cube of feta into the centre before sealing in. Chill.
- Heat the oil and fry gently in the oil for 1-2 minutes before transferring onto a lined baking tray. Cook in the oven (180C) for 5 to 10 minutes until cooked through.
- Serve immediately with cocktail sticks and the dip
Tips…
Prepare ahead to the end of stage 2, and fry and tray up. Simply cook in the oven when your guests arrive.
