Quick and easy dips: Guacamole and Hummus
Spring is here, and there’s nothing better than sharing an early evening cool drink with delicious snacks with friends. There’s always a need for simple and speedy dips within your recipe repertoire to serve as a snack or, as an alternative to a starter. Take a peek at these easy guacamole and hummus dips – you just can’t beat a homemade version, packed full of flavour. Both dips can also be prepared ahead of time.
Guacamole
You will need…
2 ripe avocados
Juice half a lemon
2 cloves of garlic, crushed
1 heaped tbsp mayonnaise
Salt and pepper
Olive Ciabatta
Serves 4
Here’s what to do…
- Half each avocado removing the skin and stone. Reserve the stones.
- Mash the avocado with a fork in a bowl keeping some texture and simply mix in the mayonnaise, lemon juice garlic and season.
- Place in a serving bowl, place the stones on top, cover with cling film to avoid any discolouring and keep in the fridge. Remove stones when ready to serve.
- Serve with ultra thin slices of lightly toasted olive ciabatta.

Tips…
Try adding 70g of a soft blue cheese such Roquefort to the guacamole for an alternative flavour.
Serve with vegetable crudities…carrots, peppers, cucumber. or tortilla chips.
Hummus

You will need…
1 400g tin chickpeas
2 tsp tahini paste
1 garlic clove, crushed
3 tbsp olive oil, plus extra to drizzle
juice 1 lemon
4 tbsp liquid from the chickpeas
Handful chopped coriander
Salt
1 tsp paprika
Serves 4

Here’s what to do…
- Drain and rinse the chickpeas, reserving the liquid.
- Liquidise with the tahini paste, garlic, pinch salt, lemon juice and 4 tbsp of the chickpea liquid, until smooth.
- Slowly pour in the olive oil, season. Serve in a bowl, drizzle with olive oil, scatter with coriander and paprika if desired, and serve with warmed flat bread.
Tips…
Add a little sundried tomato paste to the hummus mixture, or a tbsp of aubergines/roasted peppers from the deli counter to liquidise into the hummus.
