Lemon and thyme chicken kebab recipe
It’s set to be a warm weekend so time to get out and make use of the BBQ which has no doubt been hidden under a rain protective sheet if you’re reading this in the UK! Just in time for a spot of sunshine I’ve come up with a perfect lemon and thyme chicken kebab recipe for the barbeque or cooking on a griddle pan. Full of flavour and super delicious when served with a lemon and garlic dip.
You will need…
4 chicken breasts, cubed
30ml olive oil
Juice of 2 lemons
2 cloves garlic, crushed1 heaped tbsp lemon thyme leaves
Salt and pepper
Wooden skewers
Dip:
1 tbsp Greek yogurt
2 tbsp sour cream
1 tbsp white wine vinegar
Zest and juice 1 lemon
1 garlic clove, crushed
Salt and pepper
Serves 4
Here’s what to do…
- Mix the oil. lemon juice, garlic, lemon thyme and seasoning in a bowl, with the chicken, cover and leave to marinate in a fridge for about 2 hours. Do not leave for too long or the lemon juice will begin to cook the chicken.
- Combine all the ingredients for the dip and refrigerate until ready to serve.
- Thread the marinated chicken onto each skewer and griddle or barbeque for about 15 minutes, turning until all the chicken is cooked and golden.
- Drizzle with any remaining lemon juice, season again and serve with the chilled dip.
Tips…
The chicken cubes can be griddled before threading onto skewers which works well if you are just adding one cube onto a small skewer to serve as a canapé.
Serve with warmed pitta bread and crunchy salad or a simple bean salad that can be thrown together in minutes!

You know what? I often run out of time to prepare parts of a meal so I’m not averse to a little recipe hack or two. In my book, there’s nothing wrong with grabbing a few pre-made ingredients from your local supermarket and adding your own twist to them to make them your own. Here’s a salad trick to use…
You will need…
4 handfuls lamb lettuce
185g pack bean salad (edamame, butter, broad bean, mange tout)
1 tbsp olive oil
Juice half lemon
Salt and pepper
Serves 4
Here’s what to do…
- Carefully mix together the lambs lettuce and bean salad in a serving bowl.
- Mix the olive oil, lemon juice and seasoning. If the bean salad comes with a pot of dressing, you can always add this to the mixture too.
- Add the dressing and serve immediately!
