Mod Fam Food … easy peezy puds
You know those weekends when you’ve arranged for a load of buddies to come round for supper somewhere in the far off future, and then the day suddenly looms and you’ve failed to get your head around what on earth you are going to feed them? Cue mad rampage through your pile of cookery books looking for some on-trend-oh-I-just-threw-this-together kind of vibe…..Well, this week in the Mod Fam Food kitchen, we figured it was time to reign in at least one aspect of that trauma and show you some super simple puds which you can knock up in advance and wow your guests with.
Following on from last week’s simple, prepare ahead creamy desserts, check out two delicious additions to the Mod Fam Food range. We love the fact that these puds are equally ideal for romantic Valentines suppers, or larger gatherings and parties.
Passion Fruit Cheesecakes
You will need…..
400g crushed ginger biscuits
250g mascarpone cheese
75g icing sugar
1 vanilla pod
400ml creme fraiche
300ml double cream
4 passionfruit (ripe and wrinkled)
Serves 8
Here’s what to do….
1.Put the mascarpone and icing sugar in a bowl and beat until smooth, and add the creme fraiche.
2.Scrape the seeds out of the vanilla pod and add to the mascarpone.
3.Whip the cream into soft folds and stir gently into the mascarpone mixture.
4. Cut the passion fruits in half and squeeze the seeds and juice into the base of each serving glass.
5. Spoon the cheesecake mixture into the glasses and top with the crushed ginger biscuits.
Tips…
Substitute full fat creme fraiche with half fat.
You can also use ready prepared passion fruit puree as an alternative to fresh, or try Raspberry or Morello cherry puree.
Chocolate Pots
You will need…..
400ml Creme fraiche
225g 70% dark chocolate
Fresh fruit to serve
Serves 10-12 in small coffee cups/ shot glasses
Here’s what to do…
1. Melt the chocolate in a bowl over a pan of boiling water reserving 2 squares for decoration.
2. Simply stir into the creme fraiche and fill each mini cup/glass.
3. Grate the remaining chocolate into small curls and sprinkle onto of each dessert.
4. Serve with mixed fresh berries and thin biscuits of your choice.

Tips…
White chocolate makes a great substitute to the dark. Looks impressive topped with berries and grated white chocolate.
Try splitting the recipe between varieties of chocolate.
You can always use half fat creme fraiche as a healthier alternative.
