Mod Fam Food… simple salmon & spinach supper
A quick and easy salmon recipe which works equally well as a mid-week lunch and supper, or for entertaining over the weekend. Fantastic served with wilted spinach.
Herb and Pistachio crusted Salmon
You will need…
4 Salmon Fillets (skin on)
28g bread, made into breadcrumbs
28g Pistachio nuts, crushed
2 tbs fresh green pesto
Lemon zest
Juice of half a lemon
Drizzle of olive oil
Salt and pepper

Here’s what to do…
- Place the salmon fillets on a baking tray/dish.
- Mix the bread crumbs, pesto, pistachio nuts and a touch of lemon zest together in a bowl and season.
- Divide the mixture between the 4 fillets and spread over the top of each piece of salmon.
- Drizzle with a little of olive oil and bake in the oven at 180 for about 20 minutes.
- To serve, remove skin from each fillet and drizzle with the juice of half a lemon.
Tips…
Substitute the green pesto with red, or try an olive paste as an alternative.
You can substitute the pistachios for nuts of your choice, or sprinkle with a seed mixture too.
The salmon is wonderful hot, or cold if you need to prepare ahead of time.

Wilted Spinach and lentils
You will need…
200g bag washed baby spinach
125g puy lentils
28g butter
Juice of half a lemon
Dollop of Sour cream
Salt and Pepper
Serves 4
Here’s what to do…
- put the lentils into a pan of water, bring to the boil and simmer until tender.
- Melt the butter in a large pan.
- Add the spinach and cook for 2-3 minutes until just wilting. Mix in the lentils.
- Squeeze the juice of half a lemon, season and serve immediately with a dollop of sour cream
Tips…
Try adding a quarter of a tsp of Cumin or cinnamon for a middle eastern flavour.
