Prawn Salad recipe
Prawn, fennel and orange salad
Simply delicious as a fresh light lunch or a starter. This prawn salad recipe is all about preparation. Prepare everything ahead of time and quickly assemble just before serving.
You will need…
225g cooked and peeled jumbo king prawns
1 fennel bulb, peeled and thinly sliced with a mandolin
1 red onion, thinly sliced
70g feta cheese
3 oranges, peeled and sliced
60ml orange juice
2 tbsp olive oil
1 handful flat leaf parsley, roughly chopped
Salt and pepper
Serves 4 as a main, 6 as a starter
This scary mandolin works like a charm – similar from Selfridges here or John Lewis here.
Here’s what to do…
- Mix the orange juice with the olive oil and season.
- Now you’re ready to assemble! Layer the fennel, then red onion and feta, followed by the oranges and prawns. Drizzle with the dressing and scatter with the parsley before serving.

Tips…
Wonderful served with warm toasted sourdough to mop up the dressing.
