Rugby World Cup potato wedges recipe
You know how you are always looking for snacks when the Rugby’s on? well, look no further than our crispy potato wedges recipe to keep hunger at bay during the match. Regular or sweet, the choice is yours.
Herby potato wedges
You will need…
4 large baking potatoes, each cut into 8 wedges
2 tbsp olive oil
1 tbsp mixed herbs
2 garlic cloves, crushed
Salt and pepper
Zest of ½ lemon
Dip:
4 tbsp Greek yogurt
Juice and zest ½ lemon
Salt and pepper
Serves 4
Here’s what to do…
- Place the potato wedges in a large bowl and cover evenly with the seasonings.
- Transfer onto a baking tray and bake at 200C for about 35 minutes until golden brown and crispy
- Meanwhile combine the ingredients for the dip and serve in a small bowl.
- Serve the wedges with the dip straight from the oven and enjoy!
Spicy Sweet Potato wedges
You will need…
4 large sweet potatoes, each cut into 8 wedges
2 tbsp olive oil
1 tbsp Chinese five spice
Salt and Pepper
Dip:
4 tbsp mayonnaise,
1 tbsp premium mango chutney
Salt and pepper
Serves 4

- As per herby potato wedges, but substituting sweet potato ingredients!
