Teriyaki Salmon supper recipe
This week Mod Fam Food is all about speed. If you only have a short time to prepare a meal this week then look no further than the two recipes below! First up a teriyaki salmon recipe that’s super simple.
Teriyaki Salmon recipe
Salmon is so quick and easy to prepare and is equally delicious served hot or cold. This recipe, however, is even better served hot, as the salmon then just melts in your mouth. Perfect served with brown and wild rice mixed, wilted greens or a crisp salad such as the mange tout salad in this week’s Mod Fam Food.
You will need…
4 Salmon fillets, boned and skinned
Marinade:
2 cloves garlic, crushed
2 cm ginger peeled and grated
Juice ½ lemon
5 tbsp Japanese soy sauce
4 tbsp runny honey
1 tsp sesame oil
Salt and pepper
1 tbsp black sesame seeds to garnish
Serves 4
Here’s what to do…
- Mix all the marinade ingredients together in a bowl.
- Add the salmon to the marinade and coat both sides before placing on a baking tray. Cook in the oven for 15/20 minutes.
- While cooking, heat the marinade in a shallow pan to reduce down to a thick glossy consistency.
- When salmon is cooked, plate up and brush with the sauce and sprinkle with sesame seeds. Best served immediately.
Tips…
Try swapping the salmon for Icelandic cod for an alternative flavour
Sprinkle with finely sliced spring onions instead of sesame seeds.

Sugar snap pea and watercress salad
The hot peppery watercress is balanced with the tender and mild lambs lettuce…a perfect combination!

You will need…
200g sugar snap peas
25g watercress
25g lambs lettuce
1 red chilli, deseeded and thinly sliced
Dressing:
3 tbsp soy sauce
1 tbsp olive oil
2 tsp soft brown sugar
Juice ½ lemon
Salt and pepper
Serves 4
Stainless steel colander Selfridges.
Here’s what to do…
- Steam the sugar snaps for 1 minute, placing straight into a bowl of iced water. Drain when cool.
- Mix the dressing ingredients together in a bowl.
- Mix the watercress and lambs lettuce together, adding the chilli and sugar snaps.
- Dress the salad when ready to serve.
Tips…
Try using different combinations of lettuce or rocket.
Can also swap the sugar snaps for mange tout peas, add skinned broad beans or blanched sweet corn kernels. You just need to aim to create a fresh salad with a crunch!
