Warm Tuna Nicoise Salad Recipe with Ruby & Kind
I was swanning in the South of France last week, so my thoughts have been turning to lighter meals with a summer twist, and luckily for me local farm store Ruby & Kind have got the perfect recipe for an easy summer meal with their warm tuna Nicoise salad recipe.
You will need…
200g tuna steak
100g green beans
250g new potatoes
1 small red onion
1 plum tomato
100g olives
1 egg
40g pesto
Serves 2
Here’s what to do…
- Bring a pan of water to the boil and add a pinch of salt. Gently place the egg in the water and boil for 5 minutes before running under cold water and carefully removing the shell.
- Place a pan of lightly salted water over a high heat and bring to the boil
- Cut the potatoes in half, add to the pan of boiling water and cook for 10-12 minutes or until soft
- Top and tail the green beans and add to the pan with the potatoes and cook for 3 minutes
- Drain the potatoes and green beans and place in a mixing bowl
- Peel and thinly slice the red onion and add to the mixing bowl
- Cut the plum tomato into wedges and add to the mixing bowl
- Add the olives to the mixing bowl
- Add a good glug of olive oil to the mixing bowl along with the pesto and gently toss until the salad is well coated
- Place a pan or griddle pan over a high heat. Once hot cook the tuna for 3 minutes on each side for medium or 4 minutes on each side for well done
- Divide the Nicoise salad between plates and top with the tuna and half a boiled egg
