Festive Canapé Recipes to try.
I don’t know about you, but this time of year I always like to have a few festive canapé recipes at the ready just in case any last minute callers pop by, and I have to rustle up some seasonal fayre to keep the wolf from the door. So this week we thought we’d share some delicious canapé winners which are easy to make and taste delicious to boot.
Prawn & Chorizo Skewers
You will need…
225g chorizo, thinly sliced
16 cooked, peeled king prawns
Zest 1 lemon and juice of half
Handful flat leaf parsley, finely chopped
One crushed garlic clove
1 tbsp olive oil
Makes 16
Here’s what to do…
- Fry the chorizo until slightly crisp. Skewer between each prawn, transfer to a baking tray and cook (180C) for 5 minutes until warmed through.
- Mix the lemon zest, juice, parsley, garlic, olive oil together and add any juices from cooking the chorizo.
- Top each warmed prawn and serve.
Fig & Goats Cheese Wraps
You will need…
80g (5-6 slices) prosciutto di Parma
70g goats cheese without rind
Four ripe figs, quartered
Juice ½ lemon
Salt and pepper
Makes 16
Here’s what to do…
- Cut the prosciutto into 4 to produce four strips per slice.
- Spread approx ½ tsp soft goats cheese on the fig quarter and wrap with the prosciutto strips.
- Season and grill for about 1 minute or until the goat’s cheese begins to melt and the prosciutto crisps up.
- Drizzle with lemon juice and serve immediately.
